1 cup (250 ml) uncooked lentils or 1 -19 oz can lentils (drained)

2 roasted red peppers, cut into strips

1/2 cup (120 ml) green onions, thinly sliced (about 4)

6 dried apricots, cut into strips

1 cup (250 ml) fresh coriander, coarsely chopped

2 tbsp (30 ml) freshly squeezed lemon juice

1 tsp (15 ml) liquid honey

1 1/2 tsp (7 ml) curry powder (or more if you love curry)
