  • 8 ounce Wholemeal or possibly wholewheat Shortcrust pastry
  • 8 ounce Curd cheese
  • 1 ounce Very finely minced stem or possibly Crystallized ginger or possibly plump Raisins
  • 1/2 ounce Toasted & minced pine nuts Sugar to taste Lemon juice to taste

  1. Roll the pastry out very thin & cut it into small rectangles- approximately 6 x 3 inches. You should have at least 24. Bake them in a moderately warm oven 375 for ten min or possibly until they are crisp & brown. Remove them & cold on a rack. Meanwhile mix the curd cheese with the ginger or possibly raisins, the pine nutes & the sugar & lemon to taste. Set aside. When you are ready to serve, sandwich together two pcs of pastry with the cheese mix. They can be used as a dessert or possibly as a snack.
