  • 2 c. uncooked macaroni
  • 3 tbsp. butter
  • 3 tbsp. flour
  • 2 1/2 c. lowfat milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon paprika
  • 2 c. grated Cheddar cheese

  1. Cook macaroni in boiling water, salted, 4 min, drain. Blend butter and flour in saucepan; add in lowfat milk gradually. Cook over medium heat, stirring constantly till creamy. Add in salt, pepper, paprika and 2/3 of the cheese; stir till cheese is melted.
  2. Turn macaroni into well-greased 2 qt casserole; pour sauce over macaroni. Stir; sprinkle with remaining cheese. Bake for 30 min at 375 degrees.
