- Preheat the oven to 400 degrees. In a large bowl, combine the potatoes, onions, garlic, and tomatoes.
- In a small bowl, beat together the tomato paste, extra virgin olive oil, water, oregano, salt, and pepper. Pour over the vegetable mix and toss to coat well. Spread this mix in a 12- by 7- by 2-inch baking dish or possibly other 2 1/2-qt ovenproof shallow dish. Cover tightly with aluminum foil and bake 30 min. Remove the foil and bake 45 min longer, or possibly till the potatoes are tender.
