Ингредиенты

  • 6 Slices Italian Bread cut 1,4 inc thick
  • Extra Virgin Olive Oil
  • CAPER SAUCE
  • 1 cup milk
  • 1/4 cup butter [1/2 stick]
  • 2 Tbls all purpose flour
  • 1 cup chicken stock
  • salt and pepper
  • 1/3 cup heavy cream
  • 3 tbls capers
  • 2 tbs caper liquid
  • TOPPING
  • 8 Ounces Mascarpone cheese
  • 6 ounces Smoked Salmon very thinly sliced
  • 1 RED ONION thinly sliced
  • Fresh or dried Rosemary

  1. PREHEAT OVEN TO 375
  2. brush bread on one side with live oil,place on a baking sheet till toasty and crisp turn over brush the other side and bake till crisp d not burn the bread
  3. In a saucepan warm the milkover low heat
  4. in a separate saucepan melt butter,add the flour to the butter all at once and cook till bubbly
  5. Slowly pour in the broth and the warm milk whisking over low heat for about 2 minutes until creamy
  6. REMOVE pan from heat add salt pepper,Stir in heavy cream,capers,and caper liquid
  7. SPREAD each piece of bread with a layer of MASCARPONE. Top with 1/2 ounce or a little more of Salmon,a slice of red onion
  8. and top with a sprinkle of Rosemary .SERVE THE WARM CAPER SAUCE ON THE SIDE OR DRIZZLED ON TOP
