%20coincides%20with%20Cinco%20de%20Mayo,%20I%20hadn't%20actually%20planned%20this%20post%20for%20the%20holiday.%20It%20just%20happened%20to%20be%20dinner%20last%20night.%20%20Arroz%20con%20Pollo%20is%20a%20dish%20that%20is%20popular%20throughout%20Latin%20America%20and%20the%20Caribbean,%20but%20not%20necessarily%20in%20Mexico.%20So%20while%20this%20probably%20wouldn't%20count%20as%20a%20traditional%20Mexican%20dish,%20the%20flavors%20were%20on%20par%20with%20our%20Mexican%20food%20favorites.%20This%20accidentally%20turned%20out%20to%20be%20a%20timely%20meal%20for%20the%20date...%3C/p%3E%3Cp%3EWhile%20I%20have%20had%20my%20share%20of%20Mexican%20dinners%20and%20perhaps%20a%20Corona%20or%20two%20in%20the%20past%20on%20the%205th%20of%20May,%20I'd%20never%20bothered%20to%20find%20out%20the%20details%20of%20the%20celebration.%20I%20always%20thought%20that%20Cinco%20de%20Mayo%20was%20Mexican%20Independence%20Day.%20I%20was%20incorrect%20in%20this%20assumption.%20This%20day%20in%20Mexican%20history%20commemorates%20their%20army's%20victory%20over%20French%20forces%20at%20the%20Battle%20of%20Puebla%20on%20May%205,%201862.%20The%20%22real%22%20Mexican%20Independence%20Day%20is%20celebrated%20on%20September%2016th.%20Of%20course,%20had%20the%20Mexican%20army%20been%20defeated%20on%20that%20May%205th%20in%201862%20they%20would%20have%20become%20a%20French%20colony,%20so%20the%20date%20is%20quite%20important%20to%20Mexico's%20independence.%20From%20what%20I've%20read,%20Cinco%20de%20Mayo%20is%20only%20celebrated%20in%20certain%20regions%20of%20Mexico,%20opposed%20to%20here%20in%20the%20United%20States,%20where%20the%20celebration%20is%20widespread%20and%20used%20as%20a%20marketing%20ploy%20to%20draw%20large%20margarita-seeking%20crowds%20to%20dine%20in%20(or%20on%20the%20patios%20of)%20Mexican%20restaurants.%20Not%20that%20I'm%20complaining...any%20excuse%20to%20eat%20Mexican%20food%20is%20fine%20by%20me.%20I'm%20certainly%20a%20fan!%3C/p%3E%3Cp%3ESpeaking%20of%20being%20a%20fan,%20my%20whole%20family%20enjoyed%20this%20meal.%20I%20have%20wanted%20to%20try%20Arroz%20con%20Pollo%20for%20some%20time,%20but%20when%20I%20found%20this%20crock%20pot%20version%20on%20the%20Ladies%20Home%20Journal%20website,%20I%20knew%20that%20this%20was%20the%20time%20to%20give%20it%20a%20try!%20I'm%20certainly%20not%20an%20expert%20on%20Arroz%20con%20Pollo,%20but%20I%20would%20guess%20that%20this%20version%20does%20take%20some%20creative%20liberties,%20thus%20deviating%20from%20the%20traditional%20dish.%20Since%20I'm%20not%20a%20stickler%20for%20tradition%20when%20it%20comes%20to%20cooking,%20%20I%20thought%20that%20this%20meal%20was%20delicious!%20My%20family%20even%20%20happily%20polished%20off%20the%20leftovers%20for%20lunch%20today.%20That's%20a%20victory,%20for%20sure!%3C/p%3E%3Cp%3EHere's%20how%20it%20came%20together:%3C/p%3E%3Cp%3EI%20began%20with%20about%204%20pounds%20of%20bone-in,%20split%20chicken%20breast%20halves.%3C/p%3E%3Cp%3EI%20mixed%20together%20the%20recommended%20spices:%20oregano,%20cumin,%20chili%20powder,%20salt,%20and%20pepper.%20In%20addition%20to%20%22regular%22%20chili%20powder,%20I%20also%20stirred%20in%20some%20Ancho%20chili%20powder.%20I%20sprinkled%20half%20of%20the%20spice%20mixture%20onto%20the%20chicken.%3C/p%3E%3Cp%3EThen,%20I%20heated%20some%20oil%20in%20a%20skillet%20and%20browned%20the%20chicken%20on%20both%20sides.%3C/p%3E%3Cp%3EWhile%20the%20chicken%20browned,%20I%20pureed%20a%20can%20of%20diced%20tomatoes%20(I%20used%20Rotel%20diced%20tomatoes%20with%20green%20chiles),%20an%20onion,%20garlic,%20a%20chipotle%20chili%20in%20adobo%20sauce,%20and%20the%20remaining%20spice%20blend%20using%20my%20immersion%20blender.%20A%20regular%20blender%20or%20food%20processor%20would%20work%20great%20for%20this%20too.%20I%20just%20prefer%20my%20Cuisinart%20CSB-76BC%20SmartStick%20200-Watt%20Immersion%20Hand%20Blender,%20Brushed%20Chrome...less%20mess!%3C/p%3E%3Cp%3EI%20placed%20the%20browned%20chicken%20breast%20halves%20into%20the%20crock%20pot,%20topped%20them%20with%20the%20sauce,%20and%20poured%20on%20some%20chicken%20broth.%20Cover%20and%20cook%20for%204%20to%205%20hours%20on%20low%20or%202%20to%202-1/2%20hours%20on%20high.%3C/p%3E%3Cp%3EThen%20stir%20in%201-1/2%20cups%20of%20instant%20rice.%20Cover%20and%20cook%20on%20high%20for%20another%2030%20minutes.%20(I%20let%20this%20cook%20an%20extra%20hour%20and%20the%20rice%20came%20out%20on%20the%20mushy%20side).%3C/p%3E%3Cp%3EBefore%20serving,%20stir%20in%20some%20frozen%20peas,%20un-plug%20the%20crock%20pot,%20and%20let%20it%20sit,%20covered%20for%20another%2015%20minutes.%3C/p%3E%3Cp%3EServe%20the%20dish%20with%20halved%20cherry%20tomatoes,%20cilantro,%20and%20lime%20wedges.%20I%20completely%20forgot%20to%20slice%20the%20limes%20for%20this,%20but%20it%20definitely%20would've%20been%20great%20with%20a%20little%20squeeze%20of%20lime.%20I%20especially%20loved%20the%20cozy,%20slightly%20spicy%20flavors%20in%20this%20dish%20with%20the%20fresh%20bites%20of%20tomato%20an
