- Mix the seasoning info the flour. Make a well in the centre and gradually fold in the egg, followed by the lowfat milk and oil.
- Finely dice the vegetables and drain the sweetcorn thoroughly. Stir proportionately into the batter.
- Heat a little oil in a frying pan and add in a spoonful of mix at a time to the pan, turning to brown proportionately.
- Drain immediately on kitchen paper and pack loosely in a fresh serviette when completely cool. The idea is to keep the fresh, crisp texture of the vegetables as much as possible.
- NOTES : Make up your own combinations using sweetcorn as the base flavour.
