- 1 pound lean grnd beef
- 1/2 c. minced onion
- 1 clove garlic chopped
- 1 teaspoon salt
- 1/2 teaspoon chili pwdr
- 2 c. shredded Monterey Jack cheese
- 1 c. diced tomatoes
- 4 lg. flour tortillas

- Brown together grnd beef, onion and garlic in heavy frying pan over medium heat. Stirring till meat losses its pinkness. Add in salt and chili pwdr blending well. Drain. Place beef filling, cheese and tomatoes onto 1/2 of each tortilla. Fold other half over filling, pressing it down to remove any air pockets. Pour oil into large skillet to 1/4 inch deep. When oil is warm, place filled tortillas into it, pan a few at a time. Saute/fry over medium high heat till golden brown on each side about 4 seconds. Remove and drain.
