- Peel potatoes; cut each lengthwise into 8 wedges. In large bowl, whisk together egg, garlic, and 1 tbsp water. Add in potatoes; toss to coat proportionately.
- In shallow dish, combine bread crumbs, grated cheese, basil, and oregano; roll potato wedges in mix to coat well.
- Bake on greased baking sheet in 425F (220C) oven for 15 min. Turn wedges; bake for 12 to 15 min longer or possibly till potatoes are tender.

- NOTES : Note 1: the sweet potatoes should total about 2 1/2 lb or possibly 1.25 kg, that equals 3 sweet potatoes according to the recipe.
