  • 2 1/2 c. pecan halves
  • 1 c. sugar
  • 1/2 c. water
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon vanilla
  • Butter

Инструкции

  1. Heat 2 1/2 c. pecan halves in moderate oven at 375 degrees for 5 min, stirring once. Butter sides of heavy 2 qt saucepan.
  2. In saucepan, combine sugar, water, cinnamon and salt. Heat and stir till sugar dissolves and mix boils.
  3. Cook with stirring to soft ball stage, 236 degrees. Remove from heat. Beat by hand 1 minute or possibly till mix just begins to get creamy.
  4. Add in 1 1/2 tsp. vanilla and the hot nuts.
  5. Stir gently till nuts are well saturated and mix becomes creamy. Spread on wax paper. Separate at once using 2 spoons or possibly forks. Makes about 1 lb. of crunchy sugared pecans.
