- Heat 2 1/2 c. pecan halves in moderate oven at 375 degrees for 5 min, stirring once. Butter sides of heavy 2 qt saucepan.
- In saucepan, combine sugar, water, cinnamon and salt. Heat and stir till sugar dissolves and mix boils.
- Cook with stirring to soft ball stage, 236 degrees. Remove from heat. Beat by hand 1 minute or possibly till mix just begins to get creamy.
- Add in 1 1/2 tsp. vanilla and the hot nuts.
- Stir gently till nuts are well saturated and mix becomes creamy. Spread on wax paper. Separate at once using 2 spoons or possibly forks. Makes about 1 lb. of crunchy sugared pecans.
