- Preheat the oven to 250 degrees Fahrenheit.
- Brush the salmon skin with extra virgin olive oil and sprinkle it with sea salt. Sandwich the skin between two silpat or possibly non-stick cookie trays, weighted down with a couple of bricks or possibly ovenproof kitchen weights. Bake for approximately 1 hour and 45 min before removing the top silpat to crisp the fish skin.
