%20that%20TJ%20Maxx%20almost%20always%20has%20a%20Kuhn%20Rikon%20mandoline%20for%20about%20$10,%20and%20since%20I%20was%20in%20Springfield%20on%20Saturday%20I%20wandered%20in%20and%20picked%20one%20up.%20I%20was%20hoping%20for%20a%20blue%20one%20(you%20know,%20since%20everything%20else%20in%20my%20kitchen%20is%20blue)%20but%20all%20they%20had%20was%20lime%20green%20and%20red.%20But%20that's%20okay,%20because%20this%20saucy%20little%20number%20needed%20a%20name,%20and%20Ruby%20suits%20her%20so%20well.%20Odd%20how%20all%20my%20kitchen%20implements%20that%20have%20names%20seem%20to%20be%20female....%20Seriously%20though,%20if%20you%20don't%20own%20a%20mandoline,%20and%20you%20ever%20do%20any%20amount%20of%20thin%20slicing...at%20all....go%20out%20right%20now%20and%20get%20one%20of%20these.%20I%20mean%20it.%20Best%20kitchen%20gadget%20I've%20bought%20in%20a%20long%20time...and%20believe%20me,%20I%20have%20more%20than%20my%20fair%20share.%3C/p%3E%3Cp%3EAnyway,%20on%20to%20the%20food!%3C/p%3E%3Cp%3ESo,%20for%20a%20while%20now,%20I've%20been%20following%20a%20lovely%20little%20blog%20called%20The%20Bitten%20Word.%20It%20is%20written%20by%20a%20couple%20of%20guys%20who%20really%20seem%20to%20enjoy%20showcasing%20their%20favorite%20recipes%20from%20a%20wide%20assortment%20of%20food%20magazines,%20among%20other%20things,%20and%20they%20happen%20to%20be%20pretty%20darn%20good%20cooks,%20too.%20This%20arrangement%20works%20out%20nicely%20for%20me%20because%20it%20means%20I%20don't%20have%20to%20buy%20nearly%20as%20many%20food%20magazines%20to%20hoard%20at%20home%20(especially%20since%20I%20just%20purged%20my%20entire%20collection%20of%20Rachel%20Ray%20to%20be%20replaced%20with%20my%20new%20subscriptions%20to%20Bon%20Appetit%20and%20La%20Cucina%20Italiana).%3C/p%3E%3Cp%3EThe%20boys%20at%20The%20Bitten%20Word%20recently%20posted%20this%20recipe%20for%20Crispy%20Potato%20Roast.%20As%20most%20of%20you%20know,%20I%20am%20always%20on%20the%20lookout%20for%20a%20new%20potato%20recipe%20for%20my%20picky%20eater%20of%20a%20husband%20and%20this%20one%20really%20caught%20my%20eye.%20After%20I%20ran%20out%20and%20grabbed%20Ruby%20up%20from%20the%20retail%20world%20and%20brought%20her%20home,%20I%20started%20my%20evening%20meal%20last%20night%20of%20Rattlesnake%20and%20Crispy%20Potato%20Roast.%20Working%20with%20the%20mandoline,%20slicing%20six%20potatoes%20took%20me%20about%20five%20minutes.%20*angels%20sing*%20And,%20as%20a%20bonus,%20the%20dish%20itself%20was%20fantastic.%20The%20only%20drawback%20I%20could%20find%20was%20that%20it%20took%20a%20significant%20amount%20of%20oven%20time,%20but%20it%20was%20worth%20it%20in%20the%20end.%20The%20potatoes%20were%20nice%20and%20tender%20in%20the%20middle%20and%20crispy%20on%20the%20edges%20with%20just%20the%20right%20amount%20of%20seasoning.This%20one%20is%20officially%20going%20into%20regular%20rotation%20on%20my%20dinner%20menu.%3C/p%3E%3Cp%3EGo,%20RUN,%20to%20your%20nearest%20kitchen%20store%20and%20get%20yourself%20a%20mandoline....then%20start%20slicing!%3C/p%3E%3Cp%3ECrispy%20Potato%20Roast%3C/p%3E%3Cp%3E(Everyday%20Food,%20December%202009)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E4%20shallots,%20thickly%20sliced%20lengthwise%20(I%20used%20regular%20yellow%20onions,%20also%20sliced%20on%20the%20mandoline%20instead%20of%20shallots.%20I%20do%20love%20shallots,%20but,%20well,%20where%20I%20live,%20sometimes%20you%20can%20get%20them,%20and%20sometimes%20you%20just%20can't.%20So,%20I%20make%20do.)%3C/p%3E%3Cp%3Ecourse%20salt%20(I%20also%20used%20a%20healthy%20dose%20of%20fresh%20cracked%20black%20pepper)%3C/p%3E%3Cp%3E1/2%20to%201%20teaspoon%20red-pepper%20flakes%20(optional)%3C/p%3E%3Cp%3E8%20sprigs%20thyme%20(I'm%20not%20a%20big%20fan%20of%20thyme%20so%20I%20left%20it%20out.)%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20375%20degrees.%20In%20a%20small%20bowl,%20combine%20butter%20and%20oil.%20Brush%20bottom%20of%20a%20round%209-inch%20baking%20dish%20with%20some%20butter%20mixture.%20With%20a%20sharp%20knife%20or%20mandoline,%20slice%20potatoes%20very%20thinly%20crosswise.%3C/p%3E%3Cp%3E2.%20Arrange%20potato%20slices%20vertically%20in%20dish.%20Wedge%20shallots%20throughout.%20Sprinkle%20with%20salt%20and%20red-pepper%20flakes%20(if%20using);%20brush%20with%20remaining%20butter%20mixture.%20Bake%201%201/4%20hours.%20Add%20thyme%20and%20bake%20until%20potatoes%20are%20cooked%20through%20with%20a%20crisp%20top,%20about%2035%20minutes%20more.%20%20Isn't%20that%20gorgeous?%3C/p%3E%3Cp%3E**Notes:%20As%20noted%20above,%20I%20used%20yellow%20onions,%20sliced%20thin%20in%20place%20of%20the%20ever%20elusive%20shallot%20and%20it%20turned%20out%20just%20fine.%20The%20hubs%20particularly%20liked%20the%20addition.%20I%20also%20opted%20not%20to%20add%20the%20thyme,%20not%20only%20because%20the%20hubs%20and%20I%20don't%20care%20for%20it,%20but%20because%20I%20didn't%20have%20any.%20I%20might%20have%20replaced%20it%20with%20oregano%20or%20rosemary%20if%20I%20had%20had%20any%20of%20either%20of%20those,%20but%20alas,%20I%20have%20used%20up%20all%20the%20herbs%20I%20salvaged%20from%20my%20garden.%20*sigh*%20can't%20wait%20for%20spring.%20Since%20I%20didn't%20add%20the%20thyme,%20I%20just%20left%20the%20dish%20in%20the%20oven%20for%20another%2015-30%20minutes%20and%20it%20turned%20out%20just%20lovely.%3C/p%3E){kind=link}
