Crispy Haddock
Ingredients
2 large
- eggs, lightly beaten
- 4 T
- water
- 1 c
- Russian salad dressing (Wish-bone)
- 2 T
- seafood seasoning (Old Bay)
- 5 c
- cornflake cereal, crushed, (2 cups crushed)
- 1/3 c finely chopped pecans
- 3-11x3x1 inch squares
- Haddock Fillet, (Icelandic) cut in half, thawed if frozen
- 1 stick
- butter, melted
- 2
- lemons
Cooking Directions
Preheat oven to 350
In a shallow dish stir together, eggs, water, salad dressing, and seafood seasoning.
Place crushed cornflakes cereal and chopped pecans in a shallow dish
Dip fish fillets in egg mixture, then dredge in crushed cornflakes, coat well
Place coated fillets in a 13x9 in baking dish
Drizzle with melted butter, Squeeze lemon juice over all.
Cover dish with tin foil
Bake at 350 for 30-35 mins
Remove foil, Bake for an additional 15-20 mins or until cereal is golden brown and fish flakes easily with a fork

Note: At my favorite grocery store, Woodmans, I purchase Haddock fillets in 5 lb boxes. I buy 2 boxes at a time and each box contains 6-(11x3x3/8 inch) Haddock fillets. Add a Baked potato and Steamed Butternut Squash and you have a tasty, easy and economical meal! Top it off with a Big Chocolate Brownie al a mode:)
