I'll be honest with you, I picked these crackers up at Meijer last week, not because we needed a gluten- free snack option, but because I was interested in trying them for the clean, simple ingredients Van's® products are known for. Van's® Say Cheese! crispy whole grain baked crackers are made from wholesome grains such as oats, brown rice, millet, quinoa and amaranth and use only real cheddar cheese. These are the kinds of things I look for in products when I shop for my family. They are a nutritious snack choice whether you need to avoid gluten or not.
When I opened the box, my first impression a was very positive one. Crispy, crunchy little bites of full flavored yumminess! It was truly love at first bite! These crackers, along with a crisp Granny Smith apple made a very tasty and satisfying snack for me that afternoon.
That night I decided that these tasty little crackers would make a great coating for chicken..and so the idea for Crispy Gluten Free Cheesy Chicken Fingers was born! Sure, you can coat an entire chicken breast, but where's the fun in that? Chicken fingers are fun!
The crackers, once pulverized in a food processor make the perfect coating for chicken that stays crunchy in the oven and gives the chicken fingers a flavorful coating that even those avoiding gluten can enjoy!
Let's get cooking, shall we?...
First things first, Van's® Say Cheese! Crispy Whole Grain Baked Crackers are pulverized into fine crumbs. This is easily done with the food processor.
See? Perfect crumbs for coating! The cracker crumbs are dumped into a shallow bowl and more cheese and some fresh ground black pepper are added.
Next boneless, skinless chicken breasts are cut into "fingers" by slicing them long ways into three's. Make sure you separate any knives or boards you use with the raw chicken from the rest of the ingredients and wash your hands after handling the raw meat!
Finally, the chicken fingers get a bath in an egg wash and then are rolled into the cracker mixture and placed on a wire rack to bake! So easy!
My husband LOVED these chicken fingers and he had no idea they were gluten free. They are very easy to make and they are baked crispy in the oven, not fried, so they not only taste good but they are good for you too!
Crispy Gluten Free Cheesy Chicken Fingers

Delicious gluten free, crispy, oven baked, cheesy chicken fingers the entire family can enjoy for lunch, dinner, or a wholesome snack!
Ingredients
- 4 boneless, skinless chicken breasts, cut into thirds length-wise
- 2 cups Van's® Say Cheese! crispy whole grain baked crackers
- 1/4 cup grated Parmesan cheese
- 1/4 tsp. fresh ground black pepper
- 2 large eggs
- 1 TBS water
- cooking oil spray
- 1 cup marinara sauce, divided, for dipping
Instructions
Preheat oven to 425 degrees F. Spray an oven proof wire rack placed over a baking sheet with cooking spray. Set aside.
In food processor (I used my mini one), pulverize 2 cups of Van's® Say Cheese! crackers until they turn into a fine crumb.
Dump the cheese cracker crumbs into a shallow plate. Add Parmesan cheese and black pepper and mix well.
In small bowl, whisk eggs with water.
Dip the chicken fingers into the egg wash and roll into the crumb mixture, then place on prepared wire rack.
Spray chicken fingers with more cooking spray and bake in oven until done, about 15- 20 minutes or so. Cooking time may vary with chicken breast thickness, so just check to be sure they are cooked through.
Serve with warm marinara sauce (1/4 cup for each serving) for dipping!
