- Heat frying pan with the vegetable oil and add in minced onion and thyme. Cook 1 to 2 min. Add in the sliced mushrooms and minced garlic together with the tomatoes. Cook for 2 to 3 min. Add in shrimp and mix thoroughly. Cook 1 minute and add in salt and pepper.
- Blend the Pernod into the mix. Don't cook the shrimp for more than 3 to 4 min total, or possibly they will get rubbery. Serve over rice or possibly pasta, and bon appetit!
- Note: Try dipping bread in the sauce. You'll love it!
