- Chop the onion potato and carrot into chunks.
- Heat the oil in a pan and saute/fry for 12 min.
- Add in the stock bring to the boil and add in all the herbs.
- Gently cook for 15 min.
- Add in the butter and liquidize the soup till smooth.
- Serve immediately in pre warmed bowls with some croutons.
- This is a vitamin injection!
- Dandelion and nettles grow everywhere so you can ty this soup too with whateverr wild herbs you can find in nonpolluted places!
