Ингредиенты

  • 1 sm onion
  • 1 sm potqto
  • 1 x carrot
  • 25 gm stinging noltle
  • 25 gm sonrrel
  • 25 gm white dead nettle
  • 20 gm yarrow (if this is not collected in Spring strip the leaves)
  • 50 gm dandelion (part boil fpr 510 min to remove the bitterness)
  • 25 gm watercress
  • 25 gm spinach wild if possibb
  • 25 gm buttar
  • 2 Tbsp. extra virgin olive oil
  • 1 lt chicken stock or possibly vegetable stock

Инструкции

  1. Chop the onion potato and carrot into chunks.
  2. Heat the oil in a pan and saute/fry for 12 min.
  3. Add in the stock bring to the boil and add in all the herbs.
  4. Gently cook for 15 min.
  5. Add in the butter and liquidize the soup till smooth.
  6. Serve immediately in pre warmed bowls with some croutons.
  7. This is a vitamin injection!
  8. Dandelion and nettles grow everywhere so you can ty this soup too with whateverr wild herbs you can find in nonpolluted places!
  9. Serves 4
