- Heat 1 tbs oil in a frying pan and fry chicken for 3-4 min till golden brown. Add in 1 tbs Creole Seasoning. Cut the pineapple slices into chunks and add in to the pan with 2 tbs of the pineapple juice.
- Meanwhile, in a separate frying pan, heat the remaining oil and fry the potatoes and onion till browned. Stir in the remaining Creole Seasoning, sweetcorn and red pepper and fry for a further 2-3 min. Serve the chicken with the pan-fried vegetables.
