Ингредиенты

  • 2 Tbsp. extra virgin olive oil
  • 1 c. onions
  • 3 x cloves garlic, chopped
  • 1 lrg shallot, chopped
  • 1/2 x red bell pepper, diced
  • 1/2 x green pepper, diced
  • 1/2 c. celery, minced
  • 1/2 pkt frzn artichokes, quartered
  • 2 c. long-grain brown rice
  • 1/2 c. tomato paste
  • 1 1/2 c. plum tomatoes, minced
  • 2 x bay leaves
  • 2 tsp Creole seasoning
  • 1/2 tsp dry thyme
  • 1 tsp liquid smoke flavoring
  • 4 c. vegetable stock
  • 15 ounce cannellini beans, rinsed and liquid removed
  • 1/2 c. frzn peas, or possibly fresh
  • 1/2 c. frzn corn kernels, or possibly fresh
  • 1/2 c. green onions, minced salt and pepper, to taste

  1. Saute/fry onions, garlic, and shallots till tender, about 5 min. Add in peppers and celery. Saute/fry 2 min. Fold in artichoke hearts for 1 minute. Stir in brown rice till coated with oil, about 1 minute. Stir in tomato paste and saute/fry patiently till richly brown. Add in tomatoes, bay leaves, Creole seasoning, thyme, and liquid smoke. Stir in vegetable stock, deglazing bottom of the pan. Bring to simmer, cover, and reduce heat to as low as possible.
  2. Cook 30 min without stirring or possibly lifting lid. Stir in cannellini, peas, and corn. Cover and simmer 5 more min. Remove from heat and let sit covered for 5 min. Stir in green onions, adjust seasonings, and serve.
