Creamy Tomato Coconut Soup

This meal is an interesting twist on a 'comfort food' staple. Yesterday was an icky, rainy day; one of those days where you just don't want to go outside at all. A day all about movies and crafts and... cooking.

I asked honey what he wanted to have for dinner and he said 'that great tomato soup you make'. Me, being as I am thought I should throw a twist into my already homemade tomato soup. It turned out herby and flavorful and great!

And so what goes better with tomato soup than grilled cheese? I mean, I'm not going to mess with that!! That being said, I AM going to mess with my recipe... why the heck not! Please please take a look at the post for Caramelized onion grilled cheese; you have got to make it with this soup... so so good!!

In a soup pot, add your oil; heat and then toss in onions and garlic. Sautee on hight about 5 minutes, until translucent and soft. Reduce heat and add in your two cans of tomatoes, curry, salt, pepper, cumin and coriander. mix to incorporate, cover and let simmer on med/low, stirring occasionally.

Meanwhile.... prep your grilled cheese onions, etc... see the recipe!!

After about 10-15 min of soup simmering, uncover and add your can of coconut milk and basil. Reduce heat to low and let cook another 5 to 8 minutes.

If you have a hand blender (best investment ever!!!) immerse it into the soup and give it a blend. Note: you don't have to completely puree it... let it have a little texture! If you don't have a hand blender, transfer into a blender and roughly blend; again, texture. Then transfer back into the pot. But seriously... spend the money for a hand blender!! You can get really expensive ones but some are really cheap; mine is nothing fancy but it sure is powerful and it definitely gets the job done without dirtying the whole blender!

Serve:

Of course, you must serve with the caramelized onion grilled cheese. For the soup, I, of course, put it in a bowl :) On a plate which carried the sandwich goodness. This is truly a meal worth making!
