Creamy Spinach Soup (Hot Or Cold)

Ингредиенты

  • 1 pkg. frzn minced spinach, thawed
  • 2 tbsp. butter
  • 1/2 c. onion, minced
  • 2 tbsp. flour
  • 1 1/2 c. chicken broth
  • 1 1/2 c. water
  • 1 c. heavy cream for warm soup or possibly 1 c. lowfat sour cream for cool soup
  • Salt and pepper to taste
  • Dash of Tabasco
  • Healthy pinch of nutmeg

Инструкции

  1. Heat the butter in a kettle and add in the onion. Saute/fry till the onion is barely cooked, and then sprinkle with the flour and stir. Add in the broth and water and bring to a boil. Simmer about 5 - 10 min. Add in the thoroughly liquid removed minced spinach and bring to a boil again and then cook just one or possibly two min. Remove from heat and cold slightly. Puree in a blender, food processor or possibly food mill. If serving chilled, cold, then add in lowfat sour cream and chill. If serving warm, return to kettle, heat thoroughly and add in the heavy cream and heat through. Taste and add in seasonings.
