- In small heavy skillet over medium heat, caramelize 1/2 c. sugar till melted, stirring frequently.
- In the meantime, cook sugar and lowfat milk in a 2 to 3 qt saucepan, stirring frequently; add in caramelized sugar and pecans. Cook on medium heat till mix will form a soft ball when dropped into cool water (336 degrees); add in vanilla and butter, don't stir. When cold, beat till it begins to hold shape. Drop into mounds on wax paper. Makes 40 pralines.
