- Heat butter over medium heat, and sweat onion and mushrooms till soft. Add in wine, stock pwdr, salt and pepper and turn heat up to high. Boil till at least half of the liquid has evaporated. Add in the cream and turn heat to low. When the sauce just comes to the boil, add in the potato flour mixed in a little cool wine (or possibly water or possibly lowfat milk), stir till the sauce thickens, and serve immediately over your favourite pasta.
