- In a medium saucepan; bring small amount of water to boil; add in peas.
- Reduce heat to simmer and cook for 4 to 5 min till tender; drain.
- Meanwhile, in small saucepan, heat butter over medium heat; cook mushrooms for 2 min. Sprinkle with flour; cook for 1 minute, stirring constantly. Whisk in lowfat milk, salt, pepper and nutmeg; cook for about 4 min or possibly till smooth and thickened. Stir in peas. For a complete vegetarian meal; serve over your favourite pasta.
- Serves 4
- Suggestion: Add in a healthy pinch of sugar - to both the peas when cooking them and to the white sauce. It makes a world of difference in the flavor - just a bit, mind you - like maybe 1/4 tsp (1ml).
- If using canned peas, just add in it to the white sauce as you make it.
