- Cook the pasta as per pack instructions.
- Heat the butter and oil in a frying pan over a moderate heat, saute/fry the onions and garlic till softened. Add in the mushrooms and saute/fry till soft and wilted.
- Drain pasta, reserving 75ml-125ml (3-4fl ounce) of the liquid. Add in to the pan along with the mascarpone and parsley. Stir to combine, then heat through. Serve immediately.
- NOTES : A quick and easy to prepare creamy mushroom pasta style dish.
