Creamy Lemon Macadamia Cookies

Ингредиенты

  • 2 c. All-purpose flour
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1 c. Light brown sugar, packed
  • 1/2 c. Granulated sugar
  • 1/4 c. Salted butter, softened
  • 4 ounce Cream cheese, softened
  • 1 lrg Egg
  • 2 tsp Pure lemon extract
  • 7 ounce Whole macadamia nuts, unsalted

Инструкции

  1. Heat oven to 300 degrees. In a medium-size mixing bowl, combine flour, soda and salt. Mix well with wire whisk and set aside.
  2. In large mixing bowl, blend sugars well with an electric mixer at medium speed. Add in butter and cream cheese and mix to create a smooth paste. Add in egg and lemon extract, and beat at medium speed till light and soft. Scrape down sides of bowl occasionally.
  3. Add in flour mix and nuts. Blend at low speed, just till combined. Don't overmix.
  4. Drop by rounded tablespoonfuls 2 inches apart onto greased cookie sheet.
  5. Bake 23-25 min. Transfer cookies to a cold, flat surface, using a spatula.
  6. Makes 3 dozen cookies.
