Ингредиенты

  • 3 lb Red salad or possibly new white potatoes, peeled-cubed
  • 2/3 c. Grated Parmesan cheese
  • 1 c. Ricotta cheese
  • 4 x Cloves garlic, chopped
  • 1/2 med Red onion, thinly sliced
  • 1/2 c. Extra virgin olive oil
  • 6 Tbsp. Cider vinegar Salt to taste Pepper to taste fresh grnd
  • 1/2 c. Minced fresh parsley
  • 1/2 tsp Leaf oregano crushed

Инструкции

  1. Cook potatoes in boiling salted water till just tender. While potatoes cook, combine remaining ingredients except parsley and oregano. Drain potatoes. While potatoes are still warm, stir in cheese mix. Cover; and chill. Just before serving, stir in parsley and oregano. (Potatoes may be scrubbed and left unpeeled, if preferred.)
  2. Yield : 10 - 12 servings
