Creamy Cranberry Coffee Cake

The cranberries give this recipe a tart burst of flavor. It's balanced out by the sweet cheesecake layer.

  • Cake Layer:
  • 2 Cups All Purpose Flour
  • 1 Cup Granulated Sugar
  • 1 1/2 Tsp. Baking Powder
  • 1/2 Tsp. Baking Soda
  • 1 Large Egg
  • 3/4 Cup Orange Juice
  • 1/4 Cup Butter, Melted
  • 1 Tsp. Vanilla Extract
  • 2 Cups Fresh or Frozen Cranberries
  • 1 Tbsp. Orange Zest
  • Cheesecake Layer:
  • 8 Oz. Reduced-Fat Cream Cheese, Softened
  • 1/2 Cup Granulated Sugar
  • 1 Large Egg
  • 1 Tsp. Vanilla Extract
  • Topping:
  • 3/4 Cup All Purpose Flour
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Butter, Chilled & Diced (No Substitutions)

  1. Prepare Cake Layer: In a large bowl, combine the first four ingredients.
  2. Whisk the egg, orange juice, butter and vanilla; stir into dry ingredients until well combined.
  3. Fold in the cranberries and orange peel. Pour into a greased 9-in. springform pan.
  4. Prepare Cheesecake & Topping Layers: In a small bowl, beat cream cheese and sugar until smooth. Beat in egg and vanilla. Spread over batter.
  5. Combine flour and sugar; cut in butter until the mixture resembles coarse crumbs. Sprinkle over top.
  6. Place pan on a baking sheet. Bake at 350° for 70-75 minutes or until golden brown. Cool on a wire rack for 15 minutes before removing sides of pan.
