Creamy Angel Hair Pasta
I found this in an old Taste of Home Magazine when I was digging through the archives last week and I’m kicking myself for not making it sooner, it would really be great with ANY vegetables for a summertime treat or top it with the Cornflake Chicken Breasts that I’m making tomorrow!
Creamy Angel Hair Pasta
INGREDIENTS:
- 1 package angel hair pasta
- 1/2 teaspoon salt
- 14/ teaspoon pepper
- 1 tablespoons olive oil
- 1 large carrot, diced
- 2 tablespoons butter
- 1 medium onion, chopped
- 3 large garlic cloves, minced
- 2 cups heavy whipping cream
- 5 bacon strips, cooked and crumbled
- 3 tablespoons lemon juice
- 1 teaspoon Italian seasoning
- 1 cup shredded Parmesan cheese
DIRECTIONS:
Cook pasta according to package directions. In a large skillet, add 1 tablespoon olive oil and butter, saute the carrot for about 1 minute. Add the onion, and garlic; saute for 3-4 minutes onger or until tender. Stir in the cream, bacon, lemon juice and Italian seasoning. Bring to a boil, reduce heat; simmer, uncovered, for 2-3 minutes or until slightly thickened, stirring constantly. Drain pasta; toss with the sauce and garnish with Parmesan cheese.
