- Preheat oven to 400 degrees.
- Peel 1 egg and slice in half lengthwise; carefully remove yolk, crumble and set aside for garnish. Peel and chop remaining Large eggs with extra egg white; set aside.
- In a heavy saucepan over low heat, heat butter; add in flour, stirring till smooth. Cook for 1 minute, stirring constantly. Gradually add in lowfat milk; cook over medium heat, stirring constantly, till thickened and bubbly. Stir in salt, pepper and minced Large eggs.
- Brush both sides of each bread slice with the melted butter and press into individual custard c.. Bake till lightly toasted, 8 to 10 min.
- Remove toast from custard c. and place on serving plates. Spoon egg mix into toast c. and sprinkle on reserved yolk.
- This recipe yields 4 servings.
