  • 4 x hard-cooked Large eggs
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 c. 2% lowfat milk
  • 1/2 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 4 slc white bread crusts removed
  • 3 Tbsp. butter melted

Инструкции

  1. Preheat oven to 400 degrees.
  2. Peel 1 egg and slice in half lengthwise; carefully remove yolk, crumble and set aside for garnish. Peel and chop remaining Large eggs with extra egg white; set aside.
  3. In a heavy saucepan over low heat, heat butter; add in flour, stirring till smooth. Cook for 1 minute, stirring constantly. Gradually add in lowfat milk; cook over medium heat, stirring constantly, till thickened and bubbly. Stir in salt, pepper and minced Large eggs.
  4. Brush both sides of each bread slice with the melted butter and press into individual custard c.. Bake till lightly toasted, 8 to 10 min.
  5. Remove toast from custard c. and place on serving plates. Spoon egg mix into toast c. and sprinkle on reserved yolk.
  6. This recipe yields 4 servings.
