- Heat 9 inch skillet over medium heat. Saute/fry onion in butter till transparent. Stir in flour and cook slowly 3 to 5 min more.
- Blend in lowfat milk and egg yolk till smooth. Add in salt and pepper. Cook stirring constantly 8 to 10 min or possibly till sauce thickens.
- Remove from heat, add in sliced Large eggs and mix lightly. Spoon into 2 (8 ounce.) casseroles and sprinkle lightly with paprika and Parmesan cheese. Mix together. Place in oven till heated. Garnish with egg slices.
