When I could not make it to the BiG family Thanksgiving, I was asked to send my Creamed Corn recipe - not so easy because I don't measure. But this is what I wrote, and I hope it will be Just Right!
I am making my best guesses about the measures of everything, and I am writing this from my memory of what I do. It has basically been a year since I made this last. All I can say is Best of Luck to you.  This should be plenty enough for our large family Thanksgiving dinner.
About 12-20 servings. (Our big family dinner is for 30+ people and this is only a side dish so it works for all of us, possibly even with leftovers)

Ингредиенты

  • 1/3 cup Butter
  • 1/2 cup Onion, chopped tiny (optional)
  • 1/3 cup Bell Pepper, chopped tiny (optional)
  • Frozen Corn, a couple of small bags or most/all of a large bag
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Heavy Whipping Cream
  • 2 Tbls all-purpose Flour
  • 1/2 - 1 cup Whole Milk
  • 3 – 6 strips of Bacon cooked and crumbled (optional)
  • 1/4 cup or so Green Onion, sliced thin (optional)
  • 1/4 cup grated Parmesan cheese (optional)

  1. In a large skillet or saucepan, melt butter over medium heat.
  2. Add onion and bell pepper if using. Cook until slightly tender.
  3. Add corn. Cook, stirring as necessary to prevent sticking and scorching, until the corn is tender cooked (not quite as much as when making fried corn). NOTE: I have no idea how long this will take, depends on stove and how frozen the corn is when added. I guess probably 10 – 20 minutes.
  4. Add cream, salt and pepper. Bring to a boil; boil and stir for several minutes. You are trying to have the corn absorb some of that cream. This will make the corn mixture thicken some. NOTE: I have no idea how long this will take, depends on stove. I guess probably 10 minutes or so. NOTE: Also, if 1 cup of cream seems scant, add more. The corn should be a bit liquidy when the cream is first added.
  5. IF the corn is already at the desired consistency, skip the next step.
  6. Put flour and milk in a lidded jar and shaketo mix. Add this mixture, a little at a time, to your pan and cook to the desired consistency. You might not need all of it. NOTE: I have no idea how long this will take, depends on stove. I guess probably 5 minutes or so.
  7. Finally, stir in the optional green onions (&/or crumbled bacon, &/or Parmesan cheese), and pour into serving dish.
  8. NOTE: At Thanksgiving our family usually just add green onions at the end. The other options sound wonderful to me though. I would ask the Boss before making any changes at Thanksgiving, though.
