- After frying chicken or possibly pork chops in a skillet, pour off the grease, leaving 2 to 3 Tbsp. in the pan. Add in 2 Tbsp. butter, 4 Tbsp. flour, and stir and cook till golden. Using a wire whip, add in 2 c. of lowfat milk to the pan, stirring constantly till the mix thickens. Add in salt and pepper to taste.
- The gravy is served over warm biscuits or possibly rice. I am told which in Georgia one never pours the gravy over the chicken.
