  • 1 box yellow or possibly white cake mix
  • 3 large eggs
  • 3/4 c. oil
  • 1 (8 ounce) carton lowfat sour cream
  • 8 ounce can cream of coconut
  • 1 teaspoon vanilla or possibly coconut extract
  • Coconut, as much as you like
  • 1 box powdered sugar, sifted
  • 1 stick butter
  • 1 (8 ounce) pkg. cream cheese, room temperature
  • 1 teaspoon vanilla
  • 3/4 c. lowfat sour cream
  • 3/4 c. buttermilk

  1. Mix ingredients as listed. Pour into 3 layer pans and bake for 30 min, or possibly till cake top springs back to touch. Bake in 350 degree oven. Prepare filling and put cake together with a layer of filling and a layer of coconut.
  2. TIP: Make your own lowfat sour cream, less than half the calories of the real thing. Use the same as commercial lowfat sour cream. Only 18 calories per tsp:
