- Cream Filled Apple Crepes
- INGREDIENTS:
- Filling:
- 3/4 cup ricotta cheese
- 2 tablespoons sugar (or agave nectar)
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Topping:
- 4 apples-peeled and diced small
- 4 tablespoons butter
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
Store bought crepes
DIRECTIONS:
To make the filling, mix all of the ingredients in a small mixing bowl and let stand at room temperature while you prepare the topping.
To make the topping, melt the butter in a medium skillet over medium heat, add in the apples and cook until they are soft (but not mushy) about 7-8 minutes. Add in the brown sugar and cinnamon. Mix together and cook for a few minutes more. After turning off the heat, add in the vanilla.
To make the crepes: Put one crepe on a plate, spoon 12/4 cup of the filling on it and roll into a log. Top with the apple topping. And if you really want to be decadent, add some whipped topping.
