,%20it%20also%20presented%20me%20with%20some%20entertaining%20challenges.%20Big%20hearty%20pasta%20dishes%20and%20muffins%20or%20quick%20breads%20are%20staples%20for%20me%20when%20we%20have%20guests.%3C/p%3E%3Cp%3ESo%20I%20had%20to%20think%20outside%20of%20the%20box.%3C/p%3E%3Cp%3EOr%20just%20ask%20my%20Facebook%20followers%20for%20recipe%20ideas,%20which%20is%20of%20course%20much%20easier.%3C/p%3E%3Cp%3EAnd%20they%20didn't%20let%20me%20down!%3C/p%3E%3Cp%3ETo%20be%20fair,%20these%20aren't%20really%20muffins%20per%20se.%20But%20%22baked%20cheese%20cup%22%20doesn't%20seem%20quite%20right%20either,%20although%20likely%20more%20accurate.%3C/p%3E%3Cp%3EWhen%20I%20made%20them%20for%20our%20Atkins%20guests,%20I%20adhered%20strictly%20to%20the%20original%20recipe:%20only%20cream%20cheese,%20eggs%20and%20vanilla.%20We%20at%20them%20plain,%20of%20course%20(no%20waffles%20as%20in%20the%20picture%20above,%20because%20the%20Nazi%20Diet%20forbids%20it),%20with%20some%20fruit%20(which%20I%20think%20is%20also%20Nazi%20Diet-forbidden%20but%20I%20didn't%20know%20that).%20While%20they%20were%20good,%20I%20felt%20that%20they%20needed%20a%20little%20bit%20of%20sweetness%20to%20really%20make%20them%20pop.%3C/p%3E%3Cp%3ESo%20the%20next%20time%20I%20made%20them%20(for%20the%20non-Atkins%20Mr.%20Ninj%20and%20myself),%20I%20added%20some%20confectioners%20sugar.%3C/p%3E%3Cp%3EPerfect.%3C/p%3E%3Cp%3EThe%20taste%20and%20consistency%20is%20just%20like%20the%20center%20of%20a%20cheese%20danish,%20only%20slightly%20less%20sweet,%20which%20for%20me%20is%20a%20good%20thing.%20%20If%20you%20don't%20use%20silicone%20baking%20cups,%20they%20even%20develop%20a%20little%20bit%20of%20a%20cheesecake-like%20%22crust%22%20around%20the%20edges.%3C/p%3E%3Cp%3EThey%20are%20perfectly%20yummy%20to%20eat%20on%20their%20own%20but%20we%20really%20enjoy%20them%20spread%20onto%20a%20waffle%20and%20topped%20with%20some%20homemade%20marmalade.%3C/p%3E%3Cp%3EDelish!%3C/p%3E%3Cp%3EAs%20an%20added%20bonus,%20the%20consistency%20of%20these%20muffins%20is%20better%20when%20they%20are%20chilled,%20so%20they%20qualify%20as%20a%20make-ahead%20breakfast.%20Sweet.%3C/p%3E%3Cp%3ESo,%20how%20would%20you%20eat%20these%20cheesy%20muffin%20breakfast%20tidbits?%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ESoften%20the%20cream%20cheese%20in%20the%20microwave%20for%2030%20seconds%20(remove%20it%20from%20the%20metallic%20paper%20first,%20please).%20Scrape%20cheese%20into%20a%20stand%20mixer,%20add%20the%20eggs,%20vanilla%20and%20sugar%20and%20beat%20until%20very%20smooth.%20Pour%20the%20batter%20into%2012%20muffins%20cups%20and%20bake%20at%20350%20degrees%20for%2020%20minutes%20(pretty%20much%20exactly).%20Chill.%3C/p%3E%3Cp%3EServing%20suggestion:%20spread%20one%20muffin%20on%20a%20waffle%20or%20toasted%20bagel%20and%20top%20with%20jam%20or%20marmalade.%3C/p%3E){kind=link}
