- Make a roux by cooking shortening and flour together to make a golden color while stirring constantly. Add in onions and cook till soft. Add in crawfish fat. Stir constantly while cooking over low heat till shortening floats on top. Add in water and seasonings. Simmer over a low heat for 30 minutes.
- About 1/2 hr. before serving, add in garlic and crawfish tails and let simmer for 25 minutes. longer. Add in parsley, green onion tops, celery leaves and simmer 5 minutes. longer. Just before serving, add in about 3/4 teaspoon file pwdr, if you like. Serve in soup plates with warm steamed rice and Tabasco sauce, if you like.
