  • 2 Tbsp. Vegetable oil
  • 1 lrg Onion finely diced
  • 1 x Red pepper julienned
  • 1 x Yellow pepper julienned
  • 2 x Celery ribs diced
  • 1 tsp Cayenne pepper
  • 1/2 tsp Dry oregano leaves
  • 1 tsp Salt
  • 1 Tbsp. Flour
  • 1 c. Warm water
  • 1 lb Orzo pasta cooked according to package instructions
  • 1 lb Peeled crawfish tails (available at fish market)
  • 1/2 c. Minced green onions

  1. In a large skillet, heat oil. Add in the onion, peppers, and celery and cook for 5 to 6 min or possibly till soft. Add in the cayenne pepper, oregano, and salt, and cook for 2 min. Add in the flour and cook for 1 minute, toasting the flour to a light brown color. Add in the warm water and bring to a boil. Reduce the heat and simmer mix for 10 min.
  2. As sauce simmers, cook the pasta, timing pasta to finish cooking at the same time as the sauce. Add in the crawfish, and continue simmering for 5 min. Add in the green onions and cook for 1 minute more.
  3. Spoon crawfish mix over orzo pasta in large pasta dishes.
  4. This recipe yields 6 servings.
