I went to a Christmas luncheon a while back where everyone was asked to bring something they love to make this time of year. It was very fun and festive and the Joat who hosted this event had her house decorated to the nines...Joat: Jack of All Trades...and she is. The food was beautiful to look at, yummy to eat but when I spied the cranberry salsa my heart skipped a beat. I wanted desperately to ask the gal who brought the salsa for the recipe/ingredients but I FORGOT! Not being able to get it out of my head once home I gave it my best shot and made my own...actually, the first attempt failed miserably - got carried away and added all kinds of things that didn't work at all. Then I channeled the Salsa Gods and with their help I got it right on the 2nd attempt. It's different from the one at the party which was a bit sweeter, but this is good...so good, in fact, that I even took it as a gift to The Good Doctor. It was a "sorry" gift as I apparently offended her when I inadvertently overlooked her as a character in our upcoming Christmas extravaganza...but my sorry gift turned out to be another offense...as I was driving to her house I remembered The Good Doctors HATES cilantro...which this salsa is full of! But, as she was getting ready to host her office party with a room full of shrinks I knew it wouldn't go to waste and the thought of all those shrinks eating Cranberry Salsa tickled me pink. Oh, just so you know, and this came straight from The Good Doctor's mouth...a group/gathering of shrinks is called a shrug...(hmmmm...I wonder what the shrug o'shrinks thought of my "sorry gift" containing cilantro when The Good Doctor loathes its so...I'm sure they'd be able to build another wing on their homes with what it would cost me in therapy to figure that one out!
Just look at that color! It practically screams Christmas! Bright and festive and delicious...ho-ho-ho! If you use a food processor it's a snap to make - if you don't have a food processor just throw it all in your blender and if you don't have a blender then put one at the top of your Christmas list and go buy salsa at the store because you'd be chopping, slicing and dicing for hours!
- Cranberry Salsa - Me
- 1 (12 oz.) bag fresh cranberries
- 1 medium apple, preferably Macintosh, seeded and quartered
- 1 large sweet onion, quartered
- 1 bunch cilantro
- 1 medium jalapeno pepper, seeded
- juice from 2 small limes
- 1/2 tablespoons kosher salt
- 6 tablespoons sugar
In a food processor combine the cranberries and pulse, about 10 times, until finely chopped; remove to a bowl. Combine in the food processor the apple, onion, cilantro and jalapeno, processing until finely chopped; add to the cranberries. Stir in the juice from two fresh limes, the salt and sugar. Serve with chips. Makes about 4 cups.
