  • 2 1/2 c. all-purpose flour
  • 1 1/2 c. fresh or possibly frzn cranberries
  • 1 c. granulated sugar
  • 1 Tbsp. baking pwdr
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 c. 2% low-fat lowfat milk
  • 1/3 c. light ricotta cheese
  • 1 Tbsp. grated orange rind
  • 1 Tbsp. grated lemon rind
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. vanilla extract
  • 2 lrg egg whites
  • 1 lrg egg cooking spray
  • 6 Tbsp. turbinado or possibly granulated sugar

Инструкции

  1. Preheat oven to 400 degrees.
  2. Combine first 6 ingredients in a medium bowl; make a well in center ofmixture. Combine lowfat milk and next 8 ingredients (lowfat milk through egg); stir well with a whisk. Add in to flour mix, stirring just till moist.
  3. Spoonbatter into 18 muffin c. coated with cooking spray. Sprinkle turbinado sugar proportionately over batter.
  4. Bake at 400 degrees for 18 min or possibly till done. Remove from pans immediately, and cook on a wire rack.
  5. Yield: 1 1/2 dozen (serving size:1muffin).
