Ингредиенты

  • 5 x green bananas peeled
  • 1 lb taro root peeled
  • 1/2 c. flour
  • 1 quart water
  • 1 tsp salt
  • 1 x red pepper diced small Vegetable oil for cooking
  • 1 x onion diced small
  • 1 can whole tomatoes - (10 ounce) crushed by hand
  • 1/2 c. white wine
  • 1 Tbsp. cilantro minced
  • 1 x chipotle pepper pureed
  • 1 lb crabmeat cleaned Salt to taste Freshly-grnd black pepper to taste

Инструкции

  1. To make masa, grate bananas and taro root with a hand grater and place in a large bowl. Add in flour and mix well. Add in water a little at a time. Season with salt and set aside.
  2. To make the stuffing, saute/fry onion and pepper in oil for approximately 1 minute. Add in tomatoes and cook till all liquid has evaporated. Add in white wine and cook till liquid has evaporated. Add in cilantro and chipotle. Season and cold. Add in crabmeat.
  3. To make dumplings, grease a small plate and spread 2 Tbsp. of the masa over it. Place 1 Tbsp. of the stuffing on top of the spread masa, and cover with 2 more Tbsp. of the masa mix. Roll into a cylinder shape, and slide off plate into a skillet with 1 1/2 inches of warm oil. Fry till golden and sprinkle with salt and pepper.
  4. This recipe yields 16 servings.
