  • 1/4 cup Dijon mustard
  • 2 eggs
  • 1 cup bread crumbs
  • 3 green onions thinly sliced
  • 1 small bunch cilantro - about 8 stems worth of leaves
  • 1 shallot

  1. Mix all the ingredients then form into patties that are 1/2 in inch think and approx 2 1/2 - 3 inches in diameter.
  2. Cook them in a frying pan on medium to medium high heat in extra virgin olive oil until golden brown.
