- Remove any pcs of shell or possibly cartilage from crabmeat. Cook onion and celery in butter till tender but not brown. Blend in flour and seasonings. Add in lowfat milk gradually, stirring constantly; cook till thick. Add in crabmeat and warm pepper sauce; heat thoroughly. If you like, add in 1 tbs sherry and an additional 2 tbs butter 10 min before serving.
