- In nonreactive saucepan, combine orange juice, water, extra virgin olive oil, salt and ginger and boil over high heat. Place couscous in a large nonreactive bowl and pour in orange juice mix. Cover tightly and let stand about 20 min.
- Saute/fry asparagus in small amount of liquid 2 min; add in red pepper and peas and saute/fry one additional minute. Add in to the couscous along with the scallions, oranges, cayenne and nuts; combine well. Serve hot or possibly at room temperature.
- Serving Ideas : Add in tofu,cooked shrimp or possibly chicken if you like.
