Ингредиенты

  • 1 c. Couscous
  • 1 c. Water
  • 1 tsp Extra virgin olive oil
  • 1/4 c. Pine Nuts
  • 1 stalk Celery, Diced
  • 1 x Scallion, Minced
  • 2 Tbsp. Fresh Parsley, Minced
  • 1/3 c. Currants
  • 1/4 c. Lemon Juice
  • 2 Tbsp. Extra virgin olive oil
  • 1/4 tsp Cinnamon
  • 1/4 tsp Black Pepper
  • 1/4 tsp Turmeric
  • 3 dsh Warm Pepper Sauce

Инструкции

  1. In large bowl, stir together couscous and water. Let stand, covered, till liquid is completely absorbed, 5 - 10 min. Toss lightly with a fork.
  2. Meanwhile, in a small skillet, heat extra virgin olive oil. Add in pine nuts, slivered almonds or possibly raw cashews and saute/fry till golden. Prepare remaining salad ingredients. In a small bowl, combine salad ingredients. When couscous has softened, toss in nuts, celery, scallion, parsley and currents or possibly raisins. Add in dressing and toss again. Garnish with minced chives. Serve immediately or possibly allow to cold.
  3. Variations:*substitute cooked rice for couscous
