Courvoisier French Silk Chocolate Pie

  • 1 x 9-inch pastry crust, baked
  • 2 1/2 c. half and half or possibly light cream
  • 4 Tbsp. cornstarch

  1. 1/3 C sugar 6 ea squares (6 ounces) semisweet chocolate 4 ea egg yolks1 ts vanilla1/4 c Courvoisier1 c whipping cream2 tb Courvoisier
  2. Chocolate shavings
  3. In a medium saucepan, combine half and half, cornstarch, and sugar. Stir till well-blended. Add in chocolate and cook over low heat, stirring continuously, till chocolate is melted and mix comes to a boil.
  4. Stir one c. of warm mix into yolks, return to pan. Cook and stir one minute. Remove from heat and stir in vanilla and Courvoisier.
  5. Pour into prepared crust. Refrigeratefour hrs.
  6. Whip cream with two Tbsp. Courvoisier till fluffy. Spread over top of pie. Garnish with chocolate shavings.
