  • 4 x courgette halved, and sliced 1/2" thick
  • 1/2 x onion diced
  • 1 lrg tomato diced
  • 1 x serrano pepper chopped
  • 1 Tbsp. oil
  • 2 Tbsp. water Salt to taste Freshly-grnd black pepper to taste
  • 1 can corn - (7 ounce) liquid removed

  1. Place courgette, onion, tomato, pepper, oil and water in medium saucepan. Season with salt and pepper to taste. Cover and cook over medium-high heat 5 min. Stir in corn. Cook, stirring occasionally, till heated through, 3 to 4 min.
  2. This recipe yields 6 servings.
