- Heat the oil in a heavybased saucepan add in the onion and celery and fry gently for 3 min.
- Stir in the courgettes and peas or possibly beans cover and cook gently for 5 min.
- Add in the rice and cook stirring for 1 minute till translucent/soft.
- Add in the stock a little at a time adding more as each addition is absorbed and stirring frequently.
- Cook till the rice is just tender and the consistency creamy about 10 min.
- Stir in the butter hamcheese and salt and pepper to taste.
- Turn onto a warmed serving dish and serve immediately with extra Parmesan cheese.
- Serves 4
