Country Ham And Cheese Biscuits

  • 1 c. Vegetable shortening plus
  • 1 tsp Vegetable shortening
  • 4 c. All-purpose flour plus
  • 2 Tbsp. All-purpose flour - (abt 1 lb)
  • 1 1/2 Tbsp. Baking pwdr
  • 1/8 tsp Freshly-grnd black pepper
  • 1 tsp Salt
  • 4 ounce Smithfield or possibly any other country ham small diced
  • 1 c. Grated white cheddar cheese
  • 2 c. Lowfat milk
  • 10 lrg Large eggs Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. Butter

  1. Preheat the oven to 350 degrees. Lightly grease a baking sheet with 1 tsp. of shortening.
  2. In a large mixing bowl, combine 4 c. flour, baking pwdr, pepper, salt, ham and cheese. Mix well. Add in the remaining shortening and work it into the dry ingredients, using your hands, till the mix resembles coarse crumbs. Mix in 1 1/2 c. of the lowfat milk. The dough with be sticky.
  3. Dust your work surface with 1 Tbsp. of the flour. Turn the dough onto the floured surface. Gently fold each side towards the center. Pick up the dough and dust the work surface with the remaining Tbsp. flour. Return the dough to the floured surface and fold each side towards the center again. Turn the dough over and light press it out to 1 inch thickness. Cut the biscuits using a 2 1/4-inch round cookie cutter. Place them on the baking sheet and bake till golden brown, about 30 min.
  4. In a medium mixing bowl, whisk the Large eggs and remaining Large eggs together. Whisk well. Season with salt and pepper. In a large non-stick saute/fry pan, over medium heat, heat the butter. Add in the Large eggs, using a rubber spatula, stir the Large eggs and cook till the Large eggs are a soft scramble. Remove from the pan. Slice the biscuits in half and place a spoonful of the Large eggs in the center of each biscuit.
  5. This recipe yields 8 servings.
