Ингредиенты

  • 2 c. apple juice
  • 1/2 c. apple jelly
  • 1 x cinnamon stick - (3" long)
  • 1 c. all-purpose flour
  • 1/2 c. cornmeal
  • 3 Tbsp. sugar
  • 2 tsp baking pwdr
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1/3 c. dry cherries - (heaping)
  • 1 1/4 c. plain yogurt
  • 2 lrg Large eggs
  • 1/2 stk unsalted butter melted

  1. Make syrup: Boil syrup ingredients in a large saucepan till reduced to 3/4 c.. Set the syrup aside.
  2. Make griddlecakes: Whisk together flour, cornmeal, sugar, baking pwdr, baking soda, and salt in a large bowl, then stir in cherries. Stir together yogurt and Large eggs with a fork in another bowl and stir into flour mix with melted butter just till incorporated.
  3. Heat a lightly greased large non-stick skillet over moderately-low heat till warm. Pour 1/4-c. measures of batter into skillet in batches, forming 3 1/2-inch cakes, and cook about 3 min, or possibly till undersides are golden brown. Turn and cook 1 minute more, or possibly till golden brown. Transfer to a baking sheet and keep hot in a 250 degrees oven while cooking remaining cakes.
  4. Serve griddlecakes with hot syrup.
  5. This recipe yields 4 servings.
