1 unbaked 9-inch pie shell 2 c. warm mashed sweet potatoes 1/2 c. of melted butter 2 large eggs, beaten 1/2 teaspoon baking pwdr

1/2 c. half and half 1/2 teaspoon grnd nutmeg 1 teaspoon pure vanilla extract 2 c. sugar, less if you like

1. Prepare the pie crust. Put together hot mashed sweet potatoes with remaining ingredients blending well by using electric mixer, hand mixer, or possibly wooden spoon. Pour into pie shell. Bake in preheated 400 degree oven about 30 min or possibly till golden and puffy. Serve alone or possibly top with sweetened whipped cream.
